Cinnamon Honey Baked Apples with Walnuts and Raisins

A great tasty healthy dessert or snack! The is a great tasting dessert for the kids! Well me too! My wife, "Chef Lisa" came up with this awesome recipe the other night for cinnamon honey baked apples with walnuts and raisins. My 2 1/2 year old daughter and I cannot get enough of them! I have found out over all the years of training people and families, that if you get your kids into eating healthy food when they are young, the habits will continue when they are older. Finding different ways to cook and display fruit in your house is key. This was a great dish and presentation. My daughter could not wait to get a bite. Myself either! Ha!!


Ingredients

  • 4 medium baking apples (Golden Delicious, Rome Beauty, etc.)
  • 2 tablespoons of butter
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon
  • Small palmful of chopped walnuts, plus extra for topping
  • Small palmful of raisins or dried cranberries
  • Pinch of salt
  • Honey, to drizzle
Instructions

Preheat oven to 375 degrees F. Spray a pie plate or square pan with non-stick cooking spray. Wash apples and cut into the stem of each, using a spoon to scoop out the core and seeds, but taking care not to dig or cut through the bottom of the apple.

Mix together the butter, brown sugar, and cinnamon until smooth. Add the walnuts and raisins or cranberries, stir and divide the mixture equally among the apples, stuffing the center of each. Place into the prepared pan.

Top each apple with a sprinkle of chopped walnuts and press them into the mixture. Give a generous drizzle of honey over the top of each apple. Add just enough water to the pan to cover the bottom and bake at 375 degrees F for 30 to 40 minutes or until tender.
