Western Scramble With Hash Browns

The empty morning belly's will soon be full with this hearty cowboys breakfast. It's a great smell to pique's everyone interest and get them moving out of bed in the morning to see what's cooking. 

Ingredients:

Hash
3 potatoes washed and grated
1 onion diced finely
1 garlic clove
dash of oregano, parsley, basil
salt&pepper
garlic powder
2 tablespoons olive oil
1 tablespoon butter

Western Scramble
1/2 green pepper
1/2 red pepper
dab a butter
4 eggs
4-5 slices of ham
salt&pepper
you can also add more onion if you like

Directions:

In a cast iron pan start cooking the onions in the olive oil and butter. Once they start to get soft and brown up add in your potatoes, garlic, herbs, salt & pepper. Let it cook on the side for a good 20 mins or so until the potatoes start to brown up and get a crispy and stir them every few minutes.

In another pan start cooking your peppers in the butter.  Put 4 eggs in a small bowl add salt & pepper and mix them up. Pour them over the peppers and add in your ham. Cook to preferred consistency. Enjoy!
