Apple Walnut Mascarpone Crumble

Try this tasty spin on apple crumb that's sure to warm you up and satisfy that craving for something sweet. The creamy mascarpone tastes heavenly matched with the sweet apples and crunchy walnut after taste. You can always switch things up and add in different things like raisins, pears, pecans, mixed berries, and figs. It's a great way to get the kids involved as well by having them pick out things they might like and they can fill their own mini ramekin. Top it off with some whipped cream or a scoop of ice cream! This makes enough for two big people and two little people. 

Ingredients:
Filling
2 apples peeled, cored, & sliced or cubed
1 tablespoon butter
1 tablespoon brown sugar
1/4 to 1/2 cup orange juice
few drops of vanilla
sprinkle of cinnamon
1/4 cup walnuts
couple teaspoons of mascarpone

Crumb topping
1/2 cup brown sugar
1/8 cup whole wheat flour
1/4 cup oats
sprinkle of cinnamon and nutmeg
2 tablespoons butter

Directions:
Preheat oven to 350. Drop apple pieces in sauté pan with butter and starting cooking them on medium heat.  After a few minutes add in the brown sugar, orange juice, vanilla, spices, and walnuts and let it simmer until it reduces down. 

When they start to get soft remove them from heat and put in cooking cups/baking trays. 

Sprinkle the tops with the crumb mixture and bake them in oven about a 1/2 hour. Enjoy!
