Banana Muffin Cakes With Creamy Walnut Frosting

It's the end of the week and we have a few bananas leftover that are not looking too good. This is a nutty super moist sweet treat that's great to snack on over the weekend and give everyone that little burst of energy to keep them going. 

Ingredients:
3 ripe bananas mashed up
2 teaspoons fresh lemon juice
3 cups whole wheat flour
1 1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup room temp butter
2 cups organic sugar cane
3 eggs
2 teaspoons vanilla
1 1/2 cups buttermilk (shaken)

Frosting:
1 package softened cream cheese
1/4 cup softened butter
1 cup confectioner sugar
1/2 teaspoon vanilla
Sprinkle with chopped walnuts

Directions:
Preheat oven to 275. You can use muffin pans or pre-made brownie baking pans would work great too. Grease them or use muffin cups if you prefer. 
In a small bowl mash the bananas and add the lemon juice (set aside).  In another small bowl mix together flour, baking soda, & salt (set aside).  In a larger bowl mix together the butter and sugar, then add in eggs one at a time and lastly the vanilla. Add your buttermilk and then the sprinkle in a little flour mixture at a time until it's all mixed in. STIR in the banana mash and mix all together. Add the batter to your pan and bake. Check them in half hour to 45 mins until toothpick comes out clean. Once they cool frost them up. Enjoy!
