Thai Yellow Curry Chicken With Vegetables

Here is a quick deliciously easy Thai dish that will make you feel like your eating beachside in
Ko Samui with it's rich milky coconut taste and highly aromatic smell. The water chestnuts and snow peas add a great crunch in the background. Curry is a blend of spices including cumin, coriander, turmeric, fenugreek, garlic, salt, bay leaf, lemon grass, cayenne pepper, ginger, mace & cinnamon.  Trader Joe's mixes this all together for you in their Thai Yellow Curry Sauce and it tastes great when you add in some fresh veggies.  You can add in and favorite veggies you might like additionally like bean sprouts, potatoes, cherry tomatoes, chili peppers for spice, baby corn, etc.

Ingredients:

1 pound chicken cut into thin squares
salt & pepper
garlic powder
1 green pepper cut in squares
1/2 medium onion cut in squares
olive oil
1 cup cauliflower steamed
1 package snow peas
1 small can sliced water chestnuts



Directions:

In a stick free pan add onions, peppers, salt & pepper drizzle with olive oil and cook them down a little bit. In the meantime, steam your cauliflower on another burner.  Take your chicken, add salt, pepper, garlic powder, and then cut it up into chunks and add it into your pan with your onions and peppers. Then add the Trader Joe's Sauce, break up the cauliflower into pieces and toss in. Lastly, add the snow peas and water chestnuts and allow it to all simmer together for 5-10 mins until the snow peas get tender.  Serve with some Jasmine rice. Enjoy!
