Granny's Gingersnaps

My husband loves his Gingersnaps and we make these delicious soft cookies every once in a while when daddy needs a sweet treat.  Ginger has been around for thousand of years being used as a natural remedy for many ailments, and here's a great way to sneak some in.

Ingredients:

3/4 cup butter room temp
1 cup cane sugar
1 egg
1/4 cup molasses
2 cups whole wheat flour
1 tablespoon ginger
1 teaspoon cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
some extra sugar to roll dough in

Directions:

Preheat oven to 350. Mix together the butter & sugar. Once creamy add in the molasses and egg.  In a separate bowl, mix together your wheat flour, ginger, cinnamon, baking soda, & salt.  Combine wet and dry ingredients and mix together. Roll into ball, roll in sugar and put on greased cookie sheet. Bake 10 mins and tops will start to crackle.  Enjoy!
