Chicken Salad Sandwich

This is my go to when my husband calls and says that he is starving and he will be home in ten minutes.  You can always use leftover chicken or fresh chicken for this recipe and it tastes even better. The ingredients are easy to keep on hand at all times for a quick remedy. It has a great mix of textures going on with the crunch of the celery, the sweet softness of the Craisins, to the crunchy nutty cashews, and they work wonderfully together. You can always double the recipe and keep it in the fridge to use as a snack too because it's great with crackers. This will make enough for two sandwiches.

Ingredients:
1 10oz can of premium chunk chicken breast
salt & pepper
2 sticks of celery
1/4 of onion diced tiny
1/2 cup Craisins
1/2 cup lightly salted cashew pieces/halves
1/2 cup mayonnaise (or more if you prefer)

Directions:
Open and drain can of chicken and shred it in the bowl with a fork. Add salt and pepper and mix.

Toss in celery, onion, Craisins, cashews, & mayonnaise and mix together well. You can serve immediately or store in fridge for later use. Enjoy!
