California Cobb Salad

California Cobb is a beautiful looking salad that is filling enough to make it as a main dish.  One way to remember the components is to use the mnemonic EAT COBB: Egg, Avocado, Tomato, Chicken, Onion, Bacon, Blue cheese--then add lettuce.*

How can any salad with bacon in it be a bad thing? It's a refreshing taste with healthy ingredients that you can adjust to your likings.  You can use your favorite lettuce and you don't need to stick to the books with your ingredients. For example, you could swap out green onions for red ones. Today, I was not in the mood for any onions and omitted them altogether. 

Ingredients:
2 cups iceberg lettuce
1 small can sliced olives
2 hard boiled eggs
4 pieces of bacon cooked and chopped
1 avocado cut into chunks
1 plum tomato diced
5 ounces Blue Cheese
1 chicken breast cooked and cut into pieces (grilled or cooked in cast iron pan with salt, pepper, garlic powder, and either Montreal Steak seasoning or Cajun spice)

Directions:
Put lettuce down as a bed in a bowl or large plate.  Then line up your ingredients in strips.  Sliced olives, sliced eggs, bacon pieces, avocado, tomato, & Blue cheese.  Lastly, add your chicken on top and top off with your favorite dressing. Enjoy!
