Homestyle Chicken Pot Pie In Crocks

Try doing individual crock pots instead of pan style and see if that gets them excited for this comfort food.  This is a pretty simply recipe that won't take long with a few shortcuts and it's great to warm you up from the inside out on a cold day. 

Ingredients:

1 store bought pre-cooked chicken
3 potatoes peeled
1 cup baby carrots chopped
1/2 onion chopped
2-3 stalks of celery chopped
olive oil
salt&pepper
2 tablespoon flour mixed with cold water
2 cups chicken stock or boullion broth
1 cup frozen peas
1 tube croissant rolls
fresh sage, parsley, oregano, & thyme
sprinkle of garlic powder

Directions:

Peel and cut potatoes & carrots and cut into cubes and boil in water for 10 mins -drain when done.


In the meantime, take apart the chicken and cut into pieces.

 
 

Take your chopped celery and onions (add salt, pepper, garlic) and sauté them olive oil until they are soft, then add in your stock/broth. 



Take your flour in a cup and add some cold water..stir in water so that it's a soupy consistency and stir into your broth -this will thicken it up.  Now add in fresh spices, chicken pieces, potatoes, carrots and let it simmer together for a few minutes.  Taste it to see if you need to add anymore salt etc.  Spoon the mixture into your crocks to the top and cover with croissant rolls. 
 
 

Cook in oven for 20 mins or until tops turn a golden brown. Enjoy !
