Apple Pecan Bran Cereal Muffins

Here is a moist cereal muffin recipe that's a great snack for anytime of the day. You can use any variation of nuts and berries you prefer.  If you would prefer banana and walnuts instead with some cranberries go for it, because it's all about what you like. Flax seed meal provides great health benefits and a nutty taste plus this tasty muffin is packed with fiber.



Ingredients & Directions:

Mix the following together in a medium bowl and put it to the side to get soggy. 
4 cups of Stop&Shop Bran Flakes or any Bran Flakes
2 cups fat free milk

In a large bowl mix these together:
2 cups whole wheat flour
1/2 cup flax seed meal
2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg

Last bowl, mix these together:
2 eggs (you can take out yolks and use only whites if you prefer)
2/3 cup brown sugar
2/3 cup apple sauce
1/2 cup pecans
1/2 cup raisins
1 apple cut into cubes (remove core)

Mix wet ingredients together with cereal and milk until combined.  Mix wet and dry mixture together. Add your final fruits, nuts, etc.  Spray 2 dozen muffin pans with non-stick baking spray and drop the batter into tins. Bake for 20 minutes or until toothpick comes out clean. You can freeze them and pop them in micro for 30-60 seconds. Enjoy!
